Making a list of vegetarian meal ideas to get myself motivated:
Lentil soup and bread
Shakshuka and bread
Pasta soup with chickpeas instead of meat
Smart chilli (beans, no mince) with rice
Omelette (cheese, tomatoes, mushrooms) and bread
Baked beans and mash (possibly with fried eggs?)
Polenta, salad, nuts
Pasta arrabiata
Cauliflower mac cheese
Veggie curry and rice - courgette, broccoli, green beans, cashews?
